To speak of Rafael is to rummage among old factory memories: a time when he was eight years old and first coming in contact with the kitchen, when the house filled with the savory aroma and flavors of spices, stews and sweets being prepared by his mother. It all started as a children's game with cookies and pies in order to conquer the family's palate and the heart of his first love. At that time food was already a sensation adventure his mother translated into each dish allowing him to taste samples of different world cuisines each time they sat at the table. It was then that his taste for cooking started to grow as well as his desire to know more about the diverse cultures he tasted, leading him to study diplomacy. However, after several years of law school, he felt the need to explore his true calling, cooking, and this follow the instinct he had always carried with him: to become a chef. After visiting the kitchens of several restaurants in Lima, he set off for London in 1994 to work at the "Poissonnerie de I'Avenue" and "Bibendum Restaurant". At the same time he pursued his cooking career at "Le Cordon Bleu", and graduated in Paris in 1996 after having worked for restaurants such as "Le Grand Véfour", "Le Carpaccio", "Faucher", "Les Gorges de Pennafort", among others.
He returned to Lima to take charge, as chef of "Gloria" restaurant. After one year he decided to go back to London to work as an intern and continued experimenting at the "River Café", before becoming the main chef at "Base" restaurant. Upon his return, first came "Dalmacia" a café and tapas bar that he left only to open "Rafael" restaurant which would let him express his personal touch in "author cuisine" and would become the starting point from which to grow towards new horizons. Nowadays Rafael's cuisine is present in three restaurants: "Rafael" and "Café del Mar Asia" in Lima, Peru and "Rafael" in Bogotá, Colombia. His next destination: a new restaurant in Buenos Aires, Argentina. Among multiple recognitions, the "Rafael" in Lima has been elected one of the best restaurants in Latin America by the Gato Pardo Magazine (2002), as the best Peruvian restaurant by Travel & Leisure magazine (2005) and as one of the top three restaurants in Peru by both SUMMUM magazine (2007) and IN from LAN magazine (2007)
