Hans Hillburg was born in Peru. He started his career working in bars in San Francisco later he moved to LA, New York, Seattle, Mexico and The Caribbean. Hans always took his career as a bartender very seriously and not a temporary job as many. He had always been interested in learning as much as he could about all kind of spirits including its origins, history so he can create new cocktails. After 15 years abroad, he came back to Peru. Upon his return, he joined the team of “Bohemia Café”, where he designed a new and trendy menu bar that was the most popular bar in Lima for many years. In 2002 he became bar-manager of Astrid & Gaston
“Astrid y Gastón en restaurants” and helped train the barmen for all the new locals opened in South America. Hans has become an expert in Pisco and one of the best and most creatives bartenders in Peru. He started making traditional Pisco drinks such as Mojito and Tom Collins with Pisco and later working with different varieties of Pisco, Hans had helped many restaurants creating new an inventive Pisco "martinis" mixed with exotic fruits and other spirits. Hans believes that Pisco drinks are a great way to introduce Pisco to the world since in this way people can appreciate its flavors in a more subtle way instead of just straight. In this way he believes, Pisco would appeal to a broader audience. He is known for sharing his recipes and try to teach them to other barmen, since his goal is to make Pisco famous. He believes, the recipe depends on each barman's touch. He also designs his drinks depending on the type of food and the best match. Along his career, Hans has won several prices and recognitions. In 2005, during his stay in Spain he was invited to the Madrid Fusion, where he won the second price for best cocktail with his “"Cholopolitan" a version of the popular Cosmopolitan” made with pisco. He has published the book “Pisco the Spirit of Peru” with 23 original recipes, “50 Cocteles Clásicos”, co-written the book “Pasion por el Pisco” with Famous Pisco Sommelier Johnny Schuller and he also publish every year the calendar “Todo Pisco” with recipes. This year, Hans has opened his own bar in Cusco, “El Pisquerito” located near the Main Square.
