Flavio Solorzano, owner and executive Chef of the Señorio de Sulco
restaurant, decided to stay in the same field and help his mother who is a gastronomical researcher. Together have created a great balance for their restaurant including interesting dishes with reminiscences of the history of the ingredients and introducing new techniques keeping the traditional ways of cooking. Chef Flavio also works as Chef professor at the Management Hospitality School where he teaches many classes related to Peruvian Cuisine and desserts. Chef Flavio also specializes in semi-cold desserts and artisan Ice-cream making. He has created original ice-cream flavors such as ice-creams with Coca-Leaf, Purple corn and "Aguaymanto
" (Cape Gooseberry).
In addition to that, he is an expert in Ice Sculptures - an art that he learned while representing Peru in diverse Gastronomical Festivals throughout Asia. Chef Flavio is also member of the Panel of Chefs for LAN CHILE since 2000. He has designed more than 40 Peruvian Recipes for LAN's First Class Passenger service
