LA POLLADA/FREJOLADA/ANTICUCHADA
Although many of the culinary traditions are follow by all Peruvians, the "polladas", "frejoladas" or "anticuchadas" are social activities popular to only low income sectors and are usually used for special occasions. This kind of parties are also commonly used to make money for a particular purpose such as make a community dinning room, or a library, or any other kind of goal. The name of the event basically depends on the ingredient they use. When the main dish is "pollo" (chicken) is called "pollada", if the dish is "frijoles" (beans) then is called "frejolada", if the main dish is "anticuchos" then it is "anticuchada" and so on. These are usually huge parties and last all night long.
